Black Bean Soup
My adaptation of a Caribbean staple. A packed vegetarian soup featuring creamy black beans, onions, carrots, celery, and special herbs plus organic brown rice make this an enjoyable meal for young and old alike. Add your favorite sausage or top with cheese.
Cook time 2 to 3 hours after soaking the beans, or all day in a crock pot.
Makes 2 quarts of soup.
